Our Organization

Founded in 2019 as Nutritional Therapy for IBD, the GI Nutrition Foundation is a 501(c)(3) nonprofit organization dedicated to advancing evidence-based nutrition as an essential component of gastrointestinal (GI) care. Building on our roots in inflammatory bowel disease (IBD), we are expanding our scope to address nutrition’s role across GI conditions and overall digestive health, while maintaining a strong focus on Crohn’s disease and ulcerative colitis.

We inform, support, and empower patients, caregivers, and clinicians by providing trusted education, practical tools, and accessible resources that integrate nutritional therapy alongside medical treatment.

What We Do

We advance nutrition as a core component of GI care through focused education, collaboration, and advocacy. Our work centers on:

  • Delivering nutrition education and support for patients and clinicians, providing practical, evidence-based guidance to integrate nutrition into everyday life.
  • Developing innovative, accessible resources that help patients and providers apply research-driven nutritional strategies to improve health outcomes.
  • Advancing and translating nutrition research by collaborating with clinicians, researchers, patient organizations, and partners to support research priorities, encourage study participation, and bring evidence into clinical practice.
  • Promoting awareness and advocacy by elevating the patient voice and sharing the latest nutrition science in our news, social media, and presence at international GI conferences.

Our team includes international leaders in GI and nutrition, clinicians, researchers, patients, caregivers, and advocates, united by a shared commitment to evidence, collaboration, and impact.

Our Mission

The GI Nutrition Foundation is dedicated to improving the lives and health outcomes of those living with GI conditions, including Crohn’s disease, ulcerative colitis, IBS, celiac disease, and eosinophilic esophagitis (EoE), through evidence-based nutrition. We empower patients and clinicians with current, comprehensive, and practical educational resources that support nutrition as a core component of GI care.

Founders


The GI Nutrition Foundation was founded in 2019 as Nutritional Therapy for IBD by Kim S. Beall, PharmD, and Anthony C. Beall, MD, to address a critical gap in evidence-based nutritional education and resources for inflammatory bowel disease. Their work was shaped by personal experience: nutrition has played a central role in their son’s management of Crohn’s disease since his diagnosis at age thirteen in 2013. Through years of navigating care, the Bealls saw firsthand how evidence-based nutritional therapy, used alongside medical treatment, could meaningfully support health, quality of life, and long-term outcomes. At the same time, they recognized how limited access to credible, practical nutrition guidance was for many patients and clinicians. What began with a focused mission to support individuals with Crohn’s disease and ulcerative colitis has since evolved. As the organization has grown, so has its vision, leading to the transition to the GI Nutrition Foundation, reflecting an expanded commitment to advancing nutrition across gastrointestinal conditions while remaining deeply rooted in IBD care.
