Cherry Varenyky (Ukrainian Dumplings)

Cherry varenyky are tender Ukrainian dumplings filled with sweet-tart cherries and served warm with yogurt or sour cream for a comforting traditional dish.

Ingredients

4 cups plus 2 tablespoons all-purpose flour (for traditional dumplings) or substitute whole wheat flour

1 cup plus 1 tablespoon kefir (or cultured buttermilk)

½ tsp salt

1 egg

1 tbsp sunflower or olive oil

¼ cup sugar

About 1⅓ cups pitted cherries (fresh or frozen)

15 mL sunflower or olive oil

50 g sugar

Instructions

Prepare the dough

  1. In a large bowl, combine the flour, salt, egg, and sunflower or olive oil.
  2. Gradually add the kefir while kneading until a smooth, elastic dough forms.
  3. Roll out the dough to a thickness of 2–3 mm (⅛ inch) and cut out circles using a glass or pastry cutter.

Fill and shape the dumplings

  1. Place a few cherries in the center of each dough circle.
  2. Sprinkle with a small pinch of sugar, then fold the dough over and firmly seal the edges to form the dumplings.

Cook the varenyky

  1. Bring a large pot of lightly salted water to a boil.
  2. Add the dumplings and cook for 3–4 minutes, or until they float to the surface and are cooked through.
  3. Remove with a slotted spoon and serve warm.

Serving suggestion (optional): Serve with melted butter, sour cream, or plain probiotic yogurt, according to taste.
