8 ½ cups boiled and cooled water
7 ounces cooked beef
3 boiled potatoes
4 hard-boiled eggs
About 1¼ cups diced cooked beetroot
About 1½ cups sliced radishes
2 fresh cucumbers
1 bunch green onions
⅔ cup sour cream or Greek or 24-hour fermented yogurt
1 tsp mustard
1½ tbsp fresh lemon juice, plus more to taste

450–525 g boiled potatoes
4 hard-boiled eggs (about 200 g total)
200 g cooked beetroot, diced
175–200 g radishes, sliced
250–300 g cucumbers, diced
80–100 g green onions, chopped
160 g sour cream or Greek or 24-hour fermented yogurt
5 g mustard
20-30mL fresh lemon juice, plus more to taste

Instructions
- Prepare the beef: Cook the beef as a whole piece in water with a bay leaf, black peppercorns, and an onion until tender. Allow it to cool completely, then cut into 7–8 mm cubes.
- Prepare the vegetables: Cook the beetroot, potatoes, and eggs until done. Peel them and cut into cubes of the same size as the beef. Slice the radishes into thin rounds, lightly sprinkle with salt, and let stand for 5 minutes. Gently squeeze to remove excess bitterness. Dice the fresh cucumbers.
- Prepare the herbs: Mash the chopped green onions with a little salt until they release their juice. Finely chop the fresh dill and combine it with the green onions.
- Prepare the dressing: In a small bowl, mix the sour cream or yogurt with the mustard and a pinch of sugar (optional) until smooth.
- Assemble the soup: In a large pot, combine the beef, potatoes, beetroot, eggs, radishes, cucumbers, and herb mixture. Add the sour cream dressing, pour in the cooled boiled water, and stir in the lemon juice. Season with salt and sugar (optional) to taste. Refrigerate for 30 minutes before serving. Serve well chilled.
