  3. Add oats flour one spoon at a time until it feels "doughy"
  4. Let it rest 15 minutes

  2. Add half boiled and mashed green banana/plaintain
  3. 2 tbsp farmers cheese
  4. Dash of turmeric, cumin, ginger powder, cilantro and salt/pepper

Stuff the Paratha

  1. Heat a pan
  2. Take the rolled uncooked roti/tortilla
  3. Spread the mix on roti
  4. Take another uncooked roti and close on all sides
  5. Place stuffed paratha on pan and cook with oil/ghee/butter on both sides

Notes

Paratha or stuffed flatbread is a quintessential Indian breakfast. This one is oat flour paratha stuffed with carrots, boiled and mashed green banana and farmer's cheese. Usually paratha is eaten with plain yogurt but use for a probiotic variety. The stuffing has a dash of turmeric, cumin powder, ginger powder, salt, pepper and cilantro for flavor - you can flavor it any way you like.
