Instructions

  1. Add the diced apples and water to a medium saucepan over medium-high heat. Simmer, adjusting the heat as needed, until the apples are very tender, about 15 minutes.
  2. While the apples cook, line a loaf pan with parchment paper, leaving enough overhang on the sides to lift the mousse out later. Spread the chopped pistachios evenly over the bottom of the lined pan.
  3. Place the dark chocolate chips and olive oil in a heat-safe bowl. During the last few minutes of cooking the apples, set the bowl over the saucepan and stir until the chocolate is completely melted and smooth.
  4. Drain the cooked apples and transfer them to a food processor. Pour in the melted chocolate and blend until smooth. A small amount of texture is fine.
  5. Pour the apple-chocolate mixture over the pistachios in the prepared pan and smooth the top.
  6. Refrigerate for at least 3 hours or overnight, until firm enough to hold its shape. Lift the mousse from the pan using the parchment, invert onto a serving plate, remove the parchment, and serve.

Notes

For mSCD and Tasty&Healthy: Choose dark chocolate chips sweetened with dates and made with simple, additive-free ingredients. Avoid products with refined sugar, artificial sweeteners, or unnecessary emulsifiers.

If Strictures are present: Omit the chopped pistachios or use finely ground pistachios to create a smoother texture and reduce the risk from whole nut pieces.
