1 lb apples, peeled, cored, and diced
1 cup pistachios, roughly chopped *see note
1 cup dark chocolate chips, at least 70% cacao *see note
1 tbsp extra-virgin olive oil

Instructions
- Add the diced apples and water to a medium saucepan over medium-high heat. Simmer, adjusting the heat as needed, until the apples are very tender, about 15 minutes.
- While the apples cook, line a loaf pan with parchment paper, leaving enough overhang on the sides to lift the mousse out later. Spread the chopped pistachios evenly over the bottom of the lined pan.
- Place the dark chocolate chips and olive oil in a heat-safe bowl. During the last few minutes of cooking the apples, set the bowl over the saucepan and stir until the chocolate is completely melted and smooth.
- Drain the cooked apples and transfer them to a food processor. Pour in the melted chocolate and blend until smooth. A small amount of texture is fine.
- Pour the apple-chocolate mixture over the pistachios in the prepared pan and smooth the top.
- Refrigerate for at least 3 hours or overnight, until firm enough to hold its shape. Lift the mousse from the pan using the parchment, invert onto a serving plate, remove the parchment, and serve.

For mSCD and Tasty&Healthy: Choose dark chocolate chips sweetened with dates and made with simple, additive-free ingredients. Avoid products with refined sugar, artificial sweeteners, or unnecessary emulsifiers.
If Strictures are present: Omit the chopped pistachios or use finely ground pistachios to create a smoother texture and reduce the risk from whole nut pieces.
