Instructions
- Take your leftover potatoes (cut into pieces if needed).
- Heat olive oil in a pan and fry the potatoes until golden.
- Season with mild curry powder, paprika powder, ground ginger, and optional black pepper for extra spice.
- Add any leftover vegetables you have on hand and cook briefly until warmed through.
- Optional: garnish with fresh coriander (cilantro) before serving.
- Add salt to taste.
