1 cup pearl barley
¾ cup poppy seeds
3-4 tbsp honey
⅔ cup raisins
1 cup chopped walnuts
8 ½ cups water
¼ cup sugar or honey

110 g poppy seeds

Instructions
- Cook the barley: Soak the pearl barley overnight. Drain and cook in fresh water with a pinch of salt until tender.
- Prepare the poppy seeds: Pour boiling water over the poppy seeds and let them soak until softened. Drain, add the sugar or honey, and grind the seeds until they release their characteristic "poppy milk" and become smooth.
- Prepare the walnuts: Lightly toast the walnuts in the oven until fragrant, then coarsely chop or lightly crush them.
- Assemble the kutia: Combine the cooked pearl barley with the ground poppy seeds. Stir in the honey, raisins, and toasted walnuts until evenly mixed. Allow the kutia to rest for several hours to let the flavors develop. Serve well chilled in a deep serving bowl.
