7 oz ground chicken
1 egg
1 medium onion
2 medium potatoes
3½ oz fresh spinach
2½ Tbsp butter (82% fat) or olive oil
3½ Tbsp sour cream (15% fat), Greek or 24-hour fermented yogurt (SCD)

Instructions
Step 1 – Prepare the ingredients
- Combine the ground chicken with the egg and season with salt.
- Peel and finely chop the onion, then mix it into the ground chicken.
- Divide the butter into two equal portions.
- Using one portion of the butter or oil, sauté the spinach in a frying pan over low heat until wilted. Transfer to a plate and allow it to cool.
- Wash, peel, and dice the potatoes. Cook in salted water until tender.
Step 2 – Prepare the meatballs
- With damp hands, shape the chicken mixture into small patties. Place 1 teaspoon of the sautéed spinach in the center of each patty, then carefully seal and shape into meatballs.
- Arrange the meatballs in a saucepan or sauté pan. Add a small amount of water and the sour cream or yogurt. Cover and simmer over medium heat for 20–25 minutes, or until the meatballs are fully cooked.
- Mash the cooked potatoes until smooth and serve alongside the meatballs.
