Ingredients

2 heads baby romaine lettuce

7 oz fresh sweet cherries0

½ orange

1 tsp Dijon mustard

1 tsp liquid honey

2 TBSP olive oil

5.3 oz smoked chicken breast*

1.4 oz (approximately ⅓ cup.) smoked almonds*

*Commercial smoked chicken and smoked almonds frequently contain unauthorized sugars or additives. If you are strictly following the SCD diet, substitute the smoked chicken with fresh chicken breast pan-seared in olive oil, and use standard raw or dry-roasted salted almonds in place of the smoked variety.

Instructions

  1. Prep the base and cherries: Pull the leaves off the heads of baby romaine lettuce and tear them into bite-sized pieces. Pit the fresh cherries and cut them in half.
  2. Whisk the orange dressing: Thoroughly clean the orange. Finely grate the skin to get ½ teaspoon of zest, then squeeze the juice. In a small bowl, whisk together 1 tablespoon of the fresh orange juice, the ½ teaspoon of zest, the Dijon mustard, honey, and olive oil. Season the vinaigrette with salt and black pepper to taste.
  3. Assemble and serve: Toss the romaine lettuce with ⅔ of the orange dressing and the smoked chicken breast. Arrange the mixture onto a serving platter, then scatter the halved cherries and smoked almonds evenly over the top. Drizzle with the remaining dressing and serve immediately.
