Instructions
- Prep the base and cherries: Pull the leaves off the heads of baby romaine lettuce and tear them into bite-sized pieces. Pit the fresh cherries and cut them in half.
- Whisk the orange dressing: Thoroughly clean the orange. Finely grate the skin to get ½ teaspoon of zest, then squeeze the juice. In a small bowl, whisk together 1 tablespoon of the fresh orange juice, the ½ teaspoon of zest, the Dijon mustard, honey, and olive oil. Season the vinaigrette with salt and black pepper to taste.
- Assemble and serve: Toss the romaine lettuce with ⅔ of the orange dressing and the smoked chicken breast. Arrange the mixture onto a serving platter, then scatter the halved cherries and smoked almonds evenly over the top. Drizzle with the remaining dressing and serve immediately.
